Cauliflower desert, anyone?

A mouth watering dessert, low carb, low (zero) sugar, and low calorie.  My own creation.  Enjoy!

Cauliflower can be a great replacement for rice. Cauliflower can promote a healthy heart by maintaining healthy cholesterol levels and reducing the risk of stroke, it also contains folate, an important B-vitamin. I came across a cauliflower recipe in eHow.com, that is how I got this great idea to make a desert out of it.

Here is an easy recipe for a rice alternative for anyone who wants to avoid rice and sugar or any rice deserts. It takes about 30 minutes to make it over all.


Step 1 Wash cauliflower thoroughly.  We use this vegetable wash for washing all our fruits and veggies.

Step 2 You may desire to cut the head into smaller pieces for easier handling  and then process or grate cauliflower until it is the desired size of rice granules.

Step 3 Once grated into fine pieces, cook the cauliflower in microwave for 10 minutes. Pour it into a pan, add milk and sugar free or sugar and cook for 10 minutes.

Step 4  Now add coconut milk or 2% fat milk as desired.

Step 5  While the cauliflower is cooking, powder 5 to 6 Cardamom finely. Add the powder to the cauliflower and cooking for another about 5 minutes.

Step 6 Heat 2 tablespoon vegetable oil, once oil is hot add Raisins and Cashew nuts and fry in oil till Raisins and cashew-nuts become a light brown.

Once the cauliflower is nice and soft, pour it to a bowl and then add the fried Raisins and Cashew nuts just before you serve  so its nice and crispy.
